Lentil Soup Recipe with food blogger Mai maher

Ingredients:

  • 1 cup yellow lentils
  • 1 large onion, chopped
  • 1 carrot, diced
  • 1 small potato, diced
  • 2 garlic cloves, minced
  • 1 tbsp butter or oil
  • 1 tsp cumin
  • ½ tsp turmeric
  • Salt and black pepper to taste
  • 4 cups water or chicken/vegetable broth
  • Lemon juice for serving

Instructions:

  1. In a pot, heat butter or oil and sauté the onion and garlic until soft.
  2. Add the carrot, potato, and lentils, then stir well.
  3. Season with cumin, turmeric, salt, and pepper, then pour in the water or broth.
  4. Bring to a boil, then reduce the heat and let it simmer for 25-30 minutes until the vegetables are fully cooked.
  5. Blend the soup using a hand blender or regular blender until smooth and creamy.
  6. Return to the heat for 2 minutes if needed, then serve hot with lemon juice and toasted bread.
